Which Yixing Clay Is Good For Which Tea?

Many tea enthusiasts know that using a Yixing teapot can be good tea brewing, but there’s often confusion about which clay to use for which tea and how to brew it correctly. Today, we’ll explore the best yixing clay for each of the major tea types.

1. Green Tea (绿茶)

Famous green teas like Huangshan Maofeng, Taiping Houkui, and West Lake Longjing are best brewed in Duanni or Lvni Yixing teapots. These clays are light-colored and highly porous, helping to preserve the delicate flavors of green tea while preventing tea stains on the teapots.

When brewing green tea, avoid boiling water; instead, use water around 80-85°C. The optimal tea-to-water ratio is 1:50, ensuring a light, clear, and refreshing brew that is best enjoyed immediately.

2. Oolong Tea (乌龙茶)

Oolong, a semi-fermented tea, includes varieties such as Tieguanyin and Dahongpao. These teas are known for their rich aromas, which is why Zhuni and Hongni teapots are ideal. These clays are least porous, which helps bring out the fragrant notes of Oolong tea while not stealing any. Small sized teapots around 100-150ml work best, as Oolong tea requires a concentrated brew to enhance its unique fragrance.

For Oolong, use near-boiling water at 95°C, and fill half or more of your teapot with tea leaves. Cover and let the magic of fragrance unfold.

3. Yellow Tea (黄茶)

Yellow tea, such as Mengding Huangya and Junshan Yinzhen, benefits from brewing in Zini teapots. Zini clay is perfect for retaining the tea’s subtle fragrance while allowing for a gentle brew. Its versatility makes it a great choice for teas that need to be steeped for longer without overpowering their natural flavors.

4. Black Tea (红茶)

Fully fermented black teas like Keemun and Jin Jun Mei thrive in Zini or Zhuni teapots. These teapots help bring out the complex layers of flavor in black tea, from malty notes to sweet undertones. Their heat-retaining properties make them excellent for brewing black tea, allowing for a deep, flavorful brew that preserves the tea’s richness.

5. Dark Tea & Puerh (黑茶, 普洱)

Dark teas like Puerh are known to improve with age, becoming more aromatic and flavorful over time. For these teas, Zini or Di Cao Qing teapots are perfect for allowing the tea to breathe while enhancing its thick, mellow flavor.

6. White Tea (白茶)

White tea, including Baihao Yinzhen, White Peony, and Shoumei, works beautifully with Zhuni or Hongni teapots. The high density of Zhuni teapots preserves the fresh, floral fragrance of new white tea, making the tea taste sweet and fragrant.

For aged white tea, which has mellowed with time, use Zini, Hongni. These clays can highlight the earthy and warm aromas that come with the tea’s transformation.

When brewing white tea, especially fresh white tea, use water heated to 85-90°C to preserve its delicate sweetness.
